Our Orange and Mango Fondants begin with a soft Genoese sponge, chosen for its fine crumb and lightness. Once baked, we trim the surface to reveal a smooth interior. This careful crumbing step ensures the texture stays consistently soft, even under its glossy fondant coat. We then layer orange buttercream and mango pâte de fruit to create an unexpectedly citrusy burst of flavour. A thin layer of Edelweiss white Swiss chocolate lines the base of each sponge to protect its delicate texture and introduce a subtle, balancing snap. The finished Fancy is enrobed in a bright orange fondant and hand decorated at our Craft Bakery.
