A diamond‑shaped edition of our famous Fondant Fancies, made with a zesty lemon sponge and a smooth, bright lemon curd centre.

Each Fancy begins with a soft, delicately sweet sponge infused with real lemon. Once baked, we gently trim away the darker top layer to reveal the pale, tender crumb beneath, a careful step we call crumbing. Even though the sponge will soon be wrapped in silky fondant, we still perfect every hidden layer so the texture is beautifully even and melt‑in‑the‑mouth.

The sponge is layered with rich, tangy lemon curd, then wrapped in a soft, semi‑set lemon fondant that delivers that signature Bettys finish: smooth, glossy, quietly indulgent and wonderfully satisfying to eat.
