This vibrant fondant fancy combines fresh, uplifting summer flavours. Layers of soft Genoese are soaked in lemon syrup, then layered with blueberry buttercream and zesty lemon curd and topped with marzipan. A scattering of dried blueberries run through the buttercream for added texture and fruity flavour. Enrobed in fondant icing and finished with two hand-piped blueberries, it delivers a beautifully balanced taste of ripe berry sweetness, citrus freshness and a melt‑in‑the‑mouth finish.
