Each of our hugely popular Fondant Fancies is an individual Genoese sponge cake sandwiched with raspberry preserve and buttercream, topped with marzipan, coated in fondant icing, and then piped with flowers.

When the Genoese sponge is removed from the ovens, the top is baked a darker colour than the rest. We remove this layer and reveal the white sponge underneath. We call this 'crumbing'. Why do we do it when eventually the whole sponge will be encased in fondant an no-one will see darker sponger? Because we're Bettys and we like things just so - just like you do.

Here, sixteen cakes are assembled into one and loosely tied with satin ribbon.

From time to time we may substitute the colour of the ribbons we use.
