Celebrating 25 years at Bettys Cookery School: Cherry and Raspberry Iced Tea Recipe

Raspberry & Cherry Iced Tea receipe

Cool down with this beautifully refreshing Raspberry & Cherry Iced Tea. Combining fruity tea with fragrant bay, citrus and warming spices, this simple summer recipe creates a flavour-packed drink that's perfect served over ice. Top with sparkling elderflower or a splash of prosecco for an elegant drink to enjoy in the sunshine.

    Ingredients

  • 2 Bettys Raspberry & Cherry Tisane Tea Bags
  • 150g caster sugar
  • 2 fresh bay leaves
  • 4 juniper berries
  • ¼ star anise
  • ltr of cold water
  • ½ orange, rind only

Method

  • Step 1:Lightly crush the juniper berries and add to a tall pan. Over a medium heat toast in a dry pan until fragrant
  • Step 2:Add all the other ingredients into the pan and reduce by a third.
  • Step 3:Once cool store in the fridge for 2-3 days and serve over ice, topped with sparkling elderflower or prosecco.
