Rich, dense and decadent, this intensely chocolatey cake – inspired by our continental Sachertorte – is the perfect birthday surprise for grown-up chocolate-lovers. Made with Grand Cru Swiss chocolate and filled with a tangy apricot preserve, then enrobed in delicious velvety soft dark chocolate ganache, sprinkled with chocolate shavings and a hand-piped with a birthday greeting.
Grand Cru refers to the ‘best-of-the-best’ Swiss chocolate; sought-after Criollo cocoa beans roasted in small batches to get the very best flavour, then transformed into beautiful quality chocolate ‘couverture’, which is a little richer and smoother than a standard bar – and ideal for chocolatiers and artisan bakers.
