Crafted with precision at our Craft Bakery, this elegant Swiss speciality takes its name from the Engadine region, a breathtaking valley in the Swiss Alps known for its fine pastry traditions. The Japonaise refers to the traditional French-style hazelnut meringue used in this cake, known for its crisp exterior and delicately chewy centre.
Layered with care, each cake features rich, nutty hazelnut meringue, sandwiched with a soft almond paste filling and smooth almond buttercream, delivering a gently sweet, buttery flavour with a satisfying depth of nuttiness. The textures play in perfect harmony. To finish, it’s topped with a handmade miniature Florentine disc, adding a delicate caramelised crunch.
