Bettys French 75 Cocktail

    Ingredients

  • 25 ml lemon syrup (this is for 1 drink)
  • 25 ml Harrogate tipple gin.
  • 125 ml of Collet brut champagne
  • Ingredients for the lemon sugar syrup

  • 75ml water
  • 75g caster sugar
  • 150ml lemon juice

Method

  • Step 1:Heat 75ml water with 75g caster sugar and 150ml lemon juice in a pan.
  • Step 2:ring to a boil and then remove from the heat and let it cool to room temperature before putting in the fridge.
  • Step 3:Makes 300ml of sugar syrup and can be stored in the fridge for up to 1 month.
  • Step 4:Combine the gin, lemon syrup and lemon juice into a cocktail shaker filled with ice.
  • Step 5:Shake well and then strain into a chilled champagne glass.
  • Step 6:Top with the Champagne.
